Whole Grain Spaghetti with Roasted Red Bell Pepper, Toasted Pinenuts, and Porcinis in a Black Truffle Tomato Basil Sauce, dusted with Vegan Parmesan. The Vegan Parmesan is from Galaxy Foods.
Notes:
1. I reconstituted dried porcinis with warmed vegetable broth and then simmered the remaining ingredients in the broth to give a thoroughly earthy flavor to the whole dish.
